Here I am sharing this pulao recipe with raw rice but you can prepare this recipe with half-boiled or boiled rice according to your choice.

Basmati rice—————– 200 gram

Vegetables (which are available in your home

like….carrot, Potato, green peas, beans, cauliflower, etc.)

Potato————————–1/2 cup
Green peas——————-1/2 cup
Tomato ————————1 no
Green chili ——————–1 no
Onion—————————2 no
Garlic Cloves—————–3 to 4 no
Ginger————————–small piece
Cinnamon———————small piece
Cardamom——————–2 no
Black cardamom————1 no
Whole cumin—————–1/4 tsp
Bay leaf———————–1 to 2 no
Cashew nuts—————-4-5 no
Cumin seed —————–1/2 tsp
Garam masala powder—-1/2 tsp
Black pepper powder——1/2 tsp
Lemon————————-1/2 no
Salt as per requirement
Oil as per requirement

Preparation for  Pulao Recipe

  • Cut carrots into small pieces.
  • Cut beans into small pieces.
  • Cut Potatoes into small square pieces.
  • Cut all vegetables in equal sizes.
  • Cut tomato into cubes.
  • Cut green chilies into pieces it may be the small or large size your choice.
  • Cut onions into thin slices.
  • Fry half onion slices to get fried onions.
  • Make a paste of ginger and garlic or you can be chopped.      
 
 

How to make vegetable pulao recipe(stepwise photo)

Procedure Of Pulao 

  1. Switch on the gas.
  2. Put a heavy bottom pan on the gas.
  3. Put two to three tbsp of oil into the pan.
  4. Put some jeera into the pan when the jeera becomes brown.
  5. Then add cinnamon, cardamom, black cardamom, cloves, bay leaf, and star anise into the pan.
  6. Add onion slices to the pan. Cooked until the raw smell is gone.
  7. Then add ginger and garlic chopped.
  8.  Add all vegetables into the pan and saute them.
  9. Cooked for 2 minutes on medium flame.
  10.  Then add garam masala powder and black pepper powder, cumin powder.
  11. Then add tomato cube and saute very well.
  12. Then add salt as per your taste.
  13. Fry for 2-3 minutes.
  14. After 2-3 minutes add raw rice to the vegetables.

  15. Fry for 1-2 minutes.
  16. Add a double amount of water to the rice.
  17. Now add some fried onions and half lemon juice.
  18.  Now cook in high flame till water boils.
  19. Then cover the pan.
  20. Cook for 7-8 minutes on medium flame.
  21. Then check the rice in this step some water will be present and the rice will not be fully cooked.
  22. Then stir again and cover again.
  23. Now cook on low flame for 5-7 minutes.
  24. After 5-7 minutes open the cover and check the rice with the help of a knife or spoon if any water is present then cook for a few minutes to soak all water otherwise switch off the gas.
  25. Now check the rice with your fingertips if it is soft then the rice is prepared properly then you should open the cover.
  26. If rice is cooked at 90% then give a resting period by covering the pan for 10 minutes.
  27. After 10 minutes open the cover.
  28. Now Pulao is ready.

  29. If you want you can sprinkle roasted onions over the pulao otherwise you can skip it. 
  30. Now serve the vegetable pulao.

  •  Choose the best quality rice for the pulao recipe

The key to the best pulao is rice. For pulao, you have to choose good quality white rice. You can choose long-grain rice or short-grain rice according to your choice.
 
 You can choose basmati rice for pulao. Due to its long grain and fragrance, this is the best rice for pulao preparation. Basmati rice should be aged for better results.
 
Some people are used to other varieties of long-grain rice and also short-grain rice. These are Sona masuri and steerage samba.
In some regions of India parboiled basmati rice are used for pulao.
 
After all, I suggest that if you haven’t this type of rice you can make this recipe with your normal rice and enjoy the pulao with your family.
  • Tricks for separated rice

If your cooked rice is separated then you can prepare the best Pulao. If your rice becomes overcooked then your pulao becomes sticky type. These types of pulao are not good in look as well as taste.
 
To get separated rice you have alert during the time of rice making if you make overcook then rice will be sticky.
 
  • If you are a beginner you can cook the rice separately.

  • 1 Cup Green Peas
  • 1 unit Tomatoes Large
  • 1 unit Onion
  • 7-8 cloves Garlic
  • 1 inch Ginger
  • 1 piece Cinnamon small
  • 2 unit Cardmom
  • 1 unit Black Cardmom
  • 1/4th tsp Cumin seeds Whole
  • 1 No. Bayleaves
  • 7-8 unit cashew nuts Rosted(optional)
  • 1 tsp Garam Masala Powder
  • 1 tbsp lemon juice

Instructions
 

  • Switch on the gas.
