Ingredients For Dalma Recipe

Moong dal————–200 g

Potato——————-4 unit

Brinjal——————-2 unit

pumpkin——————100g

Papaya——————-2 cup(pieces)

onion——————–1 unit(large)

zinger——————-1 inch

panch phoron/ mustard seed—1 tsp

Grated fresh coconut—–3-4 tbsp

dry red chilli———–3-4 no(optional)

Cumin seeds ———-1 and 1/2 tbsp

asfoetida —————2 pinch

oil ———-———–1 tbsp

Salt

Preparation

 

  • Cut potato into large square pieces.
  • Like potato cut brinjal and pumpkin in square pieces.
  • Peel raw papaya and cut it into small pieces.
  • Cut onion into juliennes.
  • Chopped the zinger and split the green chilies.

Procedure

  • Put a Pan on medium flame. Then add cumin seeds and 2 pieces of dry red chili (optional). Roast it till the color of the cumin turns into a light golden color. don’t turn black be careful cumin turns back in a few seconds.

 

  • Now keep it on a plate to cool. When it becomes cool then make powder.

 

  • Again put that pan on medium flame add moong dal and fry it. Fry till the raw smell is gone. When the raw smell is gone and the dal changes its color lightly then switch off the gas and let it cool then wash this dal properly.

  • Now put a large size pot on medium flame and add one liter of water into the pot when water starts to boil separate 1/2 lit water into a bowl and keep it aside we will use this for adjusting consistency. Now add moong dal into the pot.

  • Now add 1/2 tsp of turmeric pwd and let it boil. When water starts to boil yellowish foam will float on the water. Remove all these with the help of a spoon.

  • Now Add potato and papaya pieces because these take more time than brinjal. Cover 1/3th of the pot with a lid and check the potatoes at each interval.

 

  • When potato and papaya boil at fifty percent then add pumpkin and brinjal and add salt according to your taste. Add 1/2 tsp zinger chopped and green chilies then cover it again like previous and check in each 5-minute interval.

  • When brinjal and pumpkin are boiled Check papaya and potato are also boiled. Moong dal also cooked properly Now check consistency. If it becomes thick then add previously prepared warm water. Now add grated fresh coconut and cook for two minutes. Now take out this pot from flame.

Ā Now this is the time for tadka. For that, you put a tadka pan or any pan on medium flame. When the pan becomes hot then pour 1-2 tbsp. of mustard oil and then add onion juliennes, chopped zinger, and dry red chilies sautĆ© this till the onion changes to a golden color.

  • When the onion changes its color then with the help of a spatula side all this and in the middle of the pan add punch phoron in oil. If you haven’t punched phorone then add mustard seed when these seeds burst and turn their color turn the flame to low mix all the tadka and sautĆ© it.

  • Now take one ladder full of dalma and add to this tadka and now switch off the gas and mix this in pot dalma and mix it.
  • Then sprinkle previously prepared roasted cumin and red chili powder. Mix this with the help of a spatula. If you like you can add fresh chopped coriander. Now this is ready to serve.

  • 4 no Potatoes large

  • 3-4 tbsp. grated fresh coconut
  • 3-4 no Dry Red chilli optional
  • 2 tsp cumin seed
  • 2 pinch asfoetida optional
  • 1 tbsp. oil or as your wish
