The drumstick plant is commonly found in South Asia. Common name of drumstick is drumstick / Moringa. In the Odia language, it is named Sajana and Moringa oleifera is the scientific name of Drumstick.

Drumstick leaves used for a different type of recipes. Drumstick leaves have lots of nutritional value and moong dal also a source of protein and vitamins.

Drumstick leaves have different types of a delicious recipe.  Drumstick leaves fry is one of them.  

My mom prepares different types of drumstick leaves these are drumstick leaves fry(Sajana saga bhaja), drumstick leaves with Moong Dal(Saga Muga), Drumstick leaves curry(Sajana Saga Besara) etc. 
 
In drumstick leaves fry you can prepare these drumstick leaves with different types of vegetables or plain. If you are preparing drumstick leaves with vegetables then you can use small square pieces of vegetables like potatoes, brinjal, pumpkin etc. If you preparing plain then you add lots of onion in drumstick leaves to fry.
 
You can also use onion or garlic crushed in the time of tempering in drumstick leaves fry but in drumstick leaves, with Moong Dal, you can use only garlic crushed which gives a good flavour to the curry.
 
You have to use fried Moong Dal. You can use organic Moong Dal for better result.

Ingredients

  • Drumstick leaves(2 cups)
  • Fried moong dal(1 cup)
  • Garlic(5/6 cloves)
  • Red chillies(2)
  • Mustard oil (2 teaspoons)
  • Mustard seeds(1 teaspoon)
  • Salt to taste.

Steps for preparation

  1. Separate all leaves from the stem. Remove insects if present and remove dust by washing with water. 
  2. Fry moong dal without oil for 1-2 min.
  3. Then add 2 cups of water into moong dal.
  4. Now add salt according to your taste.
  5. Cook moong dal. Don’t overcook the moong dal.
  6. Now put a pan in the gas. Add oil into the pan.
  7. Add crushed garlic into the oil and saute until garlic becomes light brown colour.
  8. Add red chillies into the oil.
  9. Then add 1 tsp of mustard seeds into oil.
  10. Now add all drumstick leaves into the pan and saute for 1-2 min.
  11. Then cover the pan with a lid and cook on low flame for 5 min.
  12. After 5 min opens the cover and add the cooked moong dal into the pan and mix well.
  13. Then cover the pan for 2 min.
  14. Then after 2 min opens the cover and saute again.
  15. Now turn off the gas. 
  16. Drumstick leaves with moong dal is complete and now ready to plate.

Note

 
Don’t overcook the moong dal.
