Switch on the gas.
Put a heavy bottom pan on the gas.
Put two to three tbsp of oil into the pan.
Put two to three tbsp of oil into the pan.
Put some jeera into the pan when jeera becomes brown in color.
Then add cinnamon, cardamom, black cardamom, cloves, bay leaf, and star anise into the pan.
Add onion slices into the pan. Cooked until the raw smell is gone.
Then add ginger and garlic chopped.
Add all vegetables into the pan and saute them.
Cooked for 2 minutes in medium flame.
Then add garam masala powder and black pepper powder, cumin powder.
Then add tomato cube and saute very well.
Fry for 2-3 minutes.
After 2-3 minutes add raw rice to the vegetables
Fry for 1-2 minutes.
Add a double amount of water to the rice
Now add some fried onions and half lemon juice.
Now cook in high flame till water boil.
Then cover the pan.
Cook for 7-8 minutes in medium flame.
Then check the rice in this step some water will be present and the rice is not fully cooked.
Then stir again and cover again.
After 5-7 minutes open the cover and check the rice with a help of a knife or spoon if any water is present then cook for few minutes to soak all water otherwise switch off the gas.
Now check the rice with your fingertips if it is soft then the rice is prepared properly then you should open the cover.
If rice is cooked at 90% then give a resting period by covering the pan for 10 minutes.
After 10 minutes open the cover.
Now pulao is ready.
If you want you can sprinkle roasted onions over the pulao otherwise you can skip it.
Now serve the vegetable pulao.
