Kheer recipe is a sweet recipe. Kheer comes under the dessert category. Kheer is white in color and creamy in texture. Kheer is prepared from rice, milk, sugar, lots of dry fruits. The test of kheer is delicious.
Like Rasgulla, Gulabjamun, phirin, kheer recipes also come under dessert recipes. Kheer is a simple, easy recipe but it is delicious. In most of the functions kheer always available. kheer recipe is a popular recipe.

Ingredients for kheer Recipe
Basmati Rice——-1 cup
Milk———————1 and 1/2 lit
Sugar——————-1/2 cup
Condens milk——1/2 cup
Cardamom pwd—1/2 teaspoon
Almonds————–5 no(chopped)
Cashew nuts——-10 no
Raisins—————15 no
Pistachios———-5 no(chopped)
Saffron—————4-5 petals(optional)
Cow ghee————2tsp
Preparation
- First, wash the rice very well. Then soak the rice in cold water for 2 hours.
- Take 1/3 cup of milk and sock 5 to 7 no of saffron petals for 1 hour.
- Take a pan add 1/2 tsp of cow ghee into the pan.
- When ghee becomes heat add raisins and cashew nuts and fry for 1 minute.
- After 1 minute you take out the raisins and cashew nuts to a plate.
- Take a heavy bottom pan then add 1 tsp of ghee into the pan. When ghee becomes heat. Turn the gas into a low flame.
- Rub the rice in hand by this process rice will break into small pieces. Then add rice into to ghee pan and saute for 1 -2 two minutes no need to change the rice color.
- Then add 2-3 glasses of water and 1/3 tsp of salt and cover it.
- When rice boil then turns the gas burner into low flame.
- When rice is cooked for 90% then add all the milk into the rice and cook.
- You have to stir at regular intervals otherwise kheer will stick to the utensil and start to burn.
- When rice is cooked like a creamy structure then add sugar and stir very well.
- Then add condensed milk.
- Add cardamom powder into the kheer.
- Add cashew nuts, raisins, which are fried.
- Now add saffron with milk which is previously socked.
- Now mix all very well cook for another few minutes to mix all the things.
- Now kheer becomes a creamy white structure.
- Generally, kheer is thick in nature if you want runny in structure kheer then you have to add a little amount of more milk and stir very well and cook for 1 minute.
- Switch off the gas.
- Now transfer the kheer into a bowl.
- Now cut all the almonds and pistachios into small pieces.
- Now sprinkle all the chopped almonds and fried cashew nuts and raisins over the kheer.
- Now delicious rice kheer is complete.
- You can serve hot or chill both versions are tasty.
Note
- Stir frequently otherwise the kheer will stick to the base then start burning. So be careful about that.
- Condense milk and sugar both are added to the kheer.so if you are a less sweet lover then customize according to your choice by adding less or more sugar.
- Cook rice until it makes a creamy structure.
- Always use a heavy bottom pan or pot to make a kheer.
- Always add sugar when rice already cooked otherwise rice will not cook properly.
Some important questions related to rice kheer
Ans: Yes you can prepare rice kheer very quickly. In this process crushed the sock rice by the grinder. Don’t make a very fine paste.
The first step takes milk add rice crushed leave for cook. This type of rice cooks very quickly.
Another process is to make kheer in a pressure cooker. In this process, you cook the sock rice in a pressure cooker very well with less time then open the lid and then add other ingredients like the above rice kheer procedure.
Q. What is the difference between kheer and payasam?
Ans:-No there is no difference between kheer and payasam. Payasam is another name of kheer.
Q. What is the difference between Phirni and kheer?
Ans:- Yes one difference between phirni and kheer is when we make phirni we have to grind sock rice with water. In another hand when we make kheer we have to cook the sock rice without grinding. Phirni takes less preparation time than kheer. Both are delicious.
Q.What are other types of kheer?
Ans: Like rice kheer, other types of kheer are wheat kheer, suji kheer, vermicelli kheer, paneer kheer,sabudana kheer,poha kheer,makhane kheer, khus khush kheer, moong dal kheer.
Types of kheer
You can prepare other types of kheer that are wheat kheer, suji kheer, vermicelli kheer, paneer kheer, sabudana kheer, poha kheer, makhane kheer, khuskhus kheer, moong dal kheer.
Wheat Kheer
In wheat kheer, we used crushed wheat as base ingredients. Wheat should not be a very fine powder. This wheat kheer is also very tasty.
Suji Kheer
Suji kheer is one of my favorite kheers. You must try once. It is very tasty. In my state, we used suji kheer as prasad for God. In suji kheer, we used lightly fry suji as the base ingredients. In suji kheer, you have to take less quantity of suji for kheer. Less amount of suji can become more kheer.
Vermicelli kheer
Vermicelli kheer is an all-time favorite for most people. Some people who avoid rice for any reason can make vermicelli kheer. Vermicelli kheer is very easy to prepare. You can prepare this type of kheer in less time. If any guest comes without notice you can prepare and serve this type of kheer very easily.
Paneer kheer
Paneer kheer is actually in the local language known as kheera. When we boil milk until reduce their volume 4-5 times i.e known as rabid. when we add fresh paneer(chhena) into rabid i.e known as kheera. It is very good in taste.
Sabudana kheer
Sabudana kheer is a new term for some people because we all know that sabudana is used for khichdi but sabudana is also used for kheer. This is not a new recipe. I saw in my childhood some people were used this sabudana kheer as their child’s food.
