Take a baingan and insert a knife to make a small hole.Then apply 2-3 drops of mustard oil over the baingan.
Keep baingan on the gas stove in the high flame. Roast all the sides. When it roast then bring out this to a plate and gives some time to cool. Then peel it.
Cut onions, tomatoes into square pieces. Mash all the baingan with a masher or you can use you hand to mash.
Put a pan on the gas. Then add oil. When oil becomes hot add onions and fry it till onion colour changes to light golden color.
Add all spices into onions and saute it. Then add all tomato cubes. Now add little bit of salt. Due to salt tomato can easily cook.
Roast these spices for 2-3 minutes or till tomatoes mixed with all spices. After that we add all mashed baingan into this spices.
Add salt according to your taste. Then Mix baingan and staue properly cook this for 1-2 minutes in low flame.
Now sprinkle some chopped coriander leaves. Now this is ready to plate out. Serve this with rice, roti, nan, paratha, pakhala.
