Most Famous Dahi Baigan Recipe


Baigan(egg plant)--2 no Dahi(curd)--250 grm Fenugreek seed---1/4 th tsp fenel seed---1/4 th tsp Mustard seed---1/2 tsp Dry Red chilli-4 no turmeric pwd-1/2 tsp oil  salt as per your taste

These are some seeds which we used for tempering. We use fennel seed and fenugreek seed which gives a very good aroma to this recipe and this is also very good for health. 

Cut the baigan(eggplant) into vertical and make slices. After cutting keep it in some water otherwise it turns into black colour.

Add turmeric powder and salt to baigan(eggplant) mix it well. Each pieces should mix with turmeric and salt.

Add oil into pan wait  for it becomes hot. Then add  baigan(eggplant)  pieces  and fry till golden brown color by flifing both side. Fry it in medium flame.

Add oil into pan wait  for it becomes hot. Then add fennel seed, fenugreek seed, mustard seed,turmeric powder,red chilli powder, turmeric powder and red chilli.  

When seeds are spluttering sound comes from seeds.  . Then add dry red chilli and curry leaves. Fry it in medium flame for 1 minutes.

Now turn off the switch and add thick curd or dahi and mix well. Don't switch on the gas otherwise curdling will start. So avoid  this.

Now add all baigan or eggplant pieces. Mix all the pieces with curd. This is the time for dishout. Now this recipe is ready to serve.
